The Portion Planner

Tray yields are your cook's or caterer's numbers, not a promise from the venue. The planner adds a share for seconds and for the people who were not counted.

The dishes and what one tray serves

Yields are what your cook or caterer tells you a tray serves. The sample uses common half and full tray counts.

    How the Count Works

Guests, plus a share for seconds, divided by what a tray serves.

    • 15% extra is usual
    • Half tray serves 8 to 12
    • Full tray 18 to 24

The planner multiplies the guest count by one serving of each dish for a full meal, or six tenths of a serving for light refreshments, adds the extra you choose for seconds and the cousins nobody counted, and divides by what one tray serves. A half tray of a main dish usually serves eight to twelve, a full tray eighteen to twenty-four; the sample uses middle figures, and your cook's numbers replace them.

Families bring the dishes their loved one was known for, or arrange drop-off catering from $15 per person, priced separately. Either way the staff set out the serving tables and handle the cleanup.

    What the Venue Provides

A serving kitchen, tables and chairs, and staff who set up and clear.

    • Serving kitchen
    • Tables set for your count
    • Coffee and water with Enhanced

The repast venue page describes the room: a serving kitchen with counters and a refrigerator beside the reception space, tables and chairs for your guest count, and staff who set the room before guests arrive and clear it after. Enhanced Celebration includes coffee and water service, and Legacy Tribute coffee and light refreshments for up to 50 guests.

Hot Food, Cold Food and Timing

Hot dishes need chafing dishes with fuel; the caterer's drop-off time is confirmed with the venue.

    • Chafing dishes
    • Drop-off time
    • Ice for drinks

Hot food needs chafing dishes with fuel, one per tray on the table at a time; the planner counts them. Cold dishes go out as the service ends. Confirm the caterer's drop-off time with the venue the day before so the food arrives while the room is being set, and plan ice at about a bag for every 25 guests.

    Questions

Something else on your mind? Call (954) 471-3965.

Does Sacred Farewells provide the food?

No. Families bring the dishes or arrange drop-off catering from $15 per person, priced separately. The serving kitchen, tables, chairs and the staff who set up and clear come with every package.

Can we bring our own cook or caterer?

Yes. Any caterer can drop off, and families often bring food from home. Tell the team the plan so the kitchen is ready.

How far ahead should we order?

Give the caterer the count about five days before, once replies are in. The planning checklist dates that step.
